How to roast lechon: a whole pig, step by step
Safe at 63 °C in the thickest part.
ReserveTo cook lechon baboy, buy a pig slaughtered under meat inspection, keep the carcass cold, tie it firmly to the spit and roast it slowly over charcoal, turning all the time. It is done when a thermometer in the thickest part of the ham and shoulder reads 63 °C (145 °F), followed by a 3-minute rest (USDA FSIS). Serve within 1 hour on a hot day. Need a pig? What size pig for your guests
A US extension guide plans about 1 lb (0.45 kg) of carcass weight per serving, and a carcass with the head on weighs about 78% of the live pig (Michigan State University). By these US barbecue rules a 30 kg live pig gives a carcass of about 23 kg, roughly 50 servings; a handaan with many other dishes may need less. Choose 20–25, 25–30 or 30–40 kg in the lechon size guide, and compare the lechon price in Cebu with roasting your own at the live hog price per kilo.
Before the fire
Inspected meat only
Meat from an unaccredited slaughterhouse without inspection is “hot meat”; selling it is a crime (RA 10536). We slaughter at an NMIS-accredited plant on request.
Keep it cold
Keep the raw pig at 4 °C (40 °F) or colder: in a fridge, or under ice in a large cooler if it will not fit. A frozen pig takes several days to thaw (FoodSafety.gov).
Prepare the carcass
Do not split it. Open the belly from breastbone to pelvis and remove the leaf fat, kidney fat and kidneys. Cover the ears and tail with foil (MSU).
Fix it to the spit
Wire it firmly: the pig shrinks as it cooks and can come loose from the spit after 2–3 hours (MSU).

Fire safety
Set up the roaster well away from the house, deck railings, eaves and overhanging branches, keep children and pets at least 1 metre away and never leave the fire alone (NFPA). Never burn charcoal inside a house, garage or carport, or near doors and windows: it gives off carbon monoxide (CDC).
